
The Penedès black cock is much more than an indigenous poultry breed: it is a gastronomic and cultural symbol that defines the identity of Vilafranca and its region. Documented as early as the 19th century in local markets, this rooster with dark plumage and iridescent reflections has adapted perfectly to the semi-nomadic pens of the Penedès, where it is bred with cereals and wine by-products - especially the remains of shaved grapes - which give its meat a very particular fatty infiltration.
The Protected Geographical Indication (PGI) “Gall del Penedès” guarantees that the bird has been raised in freedom for a minimum of 12 weeks, with a final meat of between 4 and 5 kg and a reduced establishment time in the last days to guarantee well-being. The slaughter is carried out in authorized slaughterhouses and is stamped with the red and yellow badge that certifies its origin.
The meat is firm, with fine fiber and intense flavor; the thigh, of a characteristic dark color, stands out especially, and the breast, which remains juicy after long roasting. It is traditionally eaten at Christmas, roasted “a la catalana” with prunes, pine nuts and stale wine, but in the last decade local chefs have created innovative versions: pickle with pomegranate and artichoke, cannelloni or stuffed dim sums. The Fira del Gall, held the weekend before Christmas, allows you to buy live specimens, taste recipes and pair them with wines from the DO Penedès, keeping alive a tradition that dates back to the Middle Ages.
