
An emblematic sweet of the Penedès, catania is a lightly toasted Marcona almond, covered with a soft walnut or hazelnut praline and coated in cocoa powder. Although his paternity is disputed among several pastry shops in the region, in Vilafranca he enjoys a special devotion and is an obligatory gift of fairs and family visits. Making them requires patience: the almond is candied, bathed in a double boiler of sugar and nut paste and finally rolled in cocoa. The result is a bonbon with a creamy texture and persistent flavor, perfect to accompany a sweet wine or the aromatic local malvasies.
