Sant Sadurní d'Anoia is the cradle of sparkling wine made with traditional method in Spain, and for this reason it is internationally known as the Capital of Cava. Its municipality, within the pendes' pre-coastal depression, has calcareous soils with clays and a temperate Mediterranean climate that guarantee a slow ripening and balanced acidity in the three historical varieties —macabeu, xarel·lo and parellada— as well as in chardonnay, pinot noir and trepat for rosés.
History and roots
The first documented vineyards date back to Roman times, but it was in the 19th century that the municipality marked a turning point: in 1872 Josep Raventós i Fatjó produced the first sparkling wine following the champenoise method. The arrival of phylloxera in 1887 was a dramatic blow, but the farming community replanted with American feet and, from this revival, arose the Phylloxera Festival that today fills the streets with fireworks every September 8 and 9. Since then, the town has not stopped perfecting the aging, manual degorging and the use of the Catalan cork stopper.
Characteristics and elaboration
The Sadurninense cava scrupulously follows the traditional method: second fermentation in the bottle, minimum aging of 9 months for the young cava, 15 months for the reserve and 30 months for the gran reserva. The remuage movement is still done by hand in wineries such as Recaredo, while others, such as Codorníu or Freixenet, incorporate automated gyropallets. The aging period in the cool underground passageways —between 12 and 30 meters underground— ensures a microoxidation that provides creaminess and fine bubbles.
Wineries and cellars to visit
• Caves Codorníu: founded in 1551 and considered the cathedral of cava. The modernist buildings of Puig i Cadafalch and their underground train are a must visit; they offer paired tastings, brunch among vineyards and direct sales on Avenida Jaume Codorníu s/n.
• Freixenet: since 1889, iconic for the Carta Nevada doll and bottle campaign. The visit includes historical audiovisual, descent into the tunnels and tasting of sparkling wines and must for minors, at Carrer Joan Sala, 2.
• Blancher: family cellar in the Plaza del Pont Romà that bets on artisanal methods and allows commented tastings of the reserve cuvées.
• Jaume Giró i Giró: boutique winery on Montaner i Oller street with limited productions and commitment to sustainability; offers vertical tasting of long aging.
• Vilarnau: located in Can Petit, surrounded by organic vineyards, combines avant-garde architecture and active wine tourism with yoga among vines and picnics.
• Recaredo: in Tamarit street, pioneer in very long brut nature aging and biodynamic viticulture; visits must be booked in advance.
• Gramona, Juvé & Camps, Mestres, Rimarts, Pere Ventura, Montesquius and L'Origan complete a constellation of more than sixty producers registered in the municipality. Many propose fork breakfasts, deworming workshops, cycling between vineyards or balloon flights.
Wine bars and tastings
The Rambla de la Generalitat is filled every October with the Cavatast, a fair that brings together about 45 stands and more than 100 references, offering tastings guided by the winemakers themselves. In July, the cycle of Sparkling Tastos al Pati de Can Guineu explores pairings with cheeses, chocolate or sushi.
Varieties and styles
The cavas brut nature and extra brut are the most demanded for their purity; trepat and pinot noir rosés are growing thanks to the young market, and the great reserve of qualified place (Recaredo Turó d'en Mota, Codorníu Ars Collecta) bring DO to haute cuisine. In short, in Sant Sadurní cava is culture, economy and, above all, collective pride.
